We offer courses tailored to the changing seasons.  

Ingredients at their peak bring forth sacred energy and vitality.  

The chef’s signature tiger pufferfish (torafugu) appears throughout the course in various forms.  

Notably, the main dish featuring torafugu and the risotto, which is finished with the essence of all the ingredients used on the day, represent the concept of "Sublimation of Climate."

To celebrate Chef Fuchigami's victory at the "Barilla PASTA CHAMPIONSHIP ASIA 2024 JAPAN," we are offering a special course at a commemorative price. The course includes the award-winning pasta, along with Chef Fuchigami's signature grilled tiger pufferfish dish, Risotto Umami, and full selection of gourmet dishes.

When considering the environmental impact of livestock farming and fishing, we believe that vegan cuisine is essential for nurturing rich food culture and passing it on to future generations.  

Japan has a long history of Shojin ryori (Buddhist temple cuisine) and fermentation culture.  

Chef Fuchigami has created a new gastronomic vegan course by combining his unique ideas with Western and Japanese culture, traditional techniques, fermentation, umami, and the seasons.  

Please experience this unique course.

*Wine pairing 20,000(Excluding tax and services.)

Led by Chef Fuchigami, who holds the Italian Republic's AIS Wine Sommelier qualification, we will curate wine pairings for each and every dish. *The total amount of wine for all pairings will be around 500ml. *The cost of the course does not include wine pairing. 

Cover charge (¥800 per person) and 10% service charge are applicable.

We also offer a wide selection of wines. Please feel free to inquire.

Regarding Allergies and Disliked Ingredients:

If you have allergies or specific ingredients you prefer to avoid, please inform us as accurately as possible when making a reservation. Please be aware that depending on the circumstances, we may not be able to accommodate your reservation request. Additionally, on the day of your visit, we may not be able to make ingredient substitutions.

Regarding Children's Visits:

Children are welcome to enjoy the same course menu as adults, provided they meet the age criteria for such dining.

Dress Code:

We kindly request that you refrain from visiting in overly casual attire.

*Please note that entry is not permitted in shorts or sandals.

*Customers with strong perfume are kindly asked to refrain from entering.

Regarding Photography:

We do not permit photography inside the premises. Unauthorized photography may result in being asked to leave.

Cancellation Policy:

3days before to the day before: 50% of the reservation total

On the day of: 100% of the reservation total

*Please note that cancellation fees as stated above will apply in all cases, including inclement weather, disasters, disruptions in transportation, unforeseen accidents, and COVID-19 infections.

Several days in advance, we begin preparations and cooking for your reserved dishes. Furthermore, for ingredients sourced directly from our producers, the procurement process starts as early as one week prior.

 

In our commitment to honoring the ingredients crafted with care by our producers, we kindly request that you notify us promptly in the event of any changes or cancellations.
